Why ingredient weights are honest here
A "cup of flour" can weigh anywhere from 120 to 150 grams depending on how you fill the cup, which is why converters disagree. We pin each ingredient to a sourced figure: dry ingredients follow King Arthur Baking's spooned-and-leveled weight chart, liquids use measured density, and every conversion shows its figure and the typical published range. No mystery numbers.
Cup standards
The converter supports the US customary cup (236.6 ml, the default, used by nearly all recipes), the metric cup (250 ml, used in Australia and New Zealand), and the UK imperial cup (284 ml, found in older UK cookbooks), so recipes from anywhere convert correctly.
